Reflecting the French concept of Chateau, Villa Della Torre’s Valpolicella Classico Superiore is obtained from the vineyards surrounding the Renaissance villa; the complex is located just outside the inhabited center of Fumane near the main road that starts from the city of Verona and climbs the hill. The soils in this part of the Valpolicella Classica are made up of the disintegration of limestone-dolomite formations as well as basalts, morainal and fluvial deposits of volcanic origin. This enables the vines to access water reserves in different ways in the various stages of growth and development of the leaf canopy during the ripening phase.
Grape variety: Corvinone 70%, Corvina 25%, Rondinella 5%
Vinification: The grapes are manually harvested in late September and fermented in steel tanks. After maceration, the wine is aged for 12 months in oak barrels and then for six months in the bottle.
Tasting notes: Ageing in wood gives the wine a complex and deep profile. In the glass, it is medium ruby red. The bouquet expresses aromas of raspberry, small berries, hints of vanilla, and spices. On the palate, it has substantial structure, subtle, well-integrated tannins, and a fresh, persistent finish. Harmonious and balanced, it is pleasantly smooth and fresh, making it very versatile to pair with food. While enjoyable in its youthful version, bottle aging will confer further depth and character.
Food pairing: white and red meat dishes, especially traditional Veronese dishes; this cuisine, with its local homestyle recipes, enhances poultry, above all chicken and turkey, rabbit, guinea fowl, and duck. It also pairs extremely well with cheese, such as the extraordinary cheeses of Verona’s Lessini mountains, and the dry-cured meats.
