This wine was born in the shadow of Etna in a valley between the Nebrodi mountain range and the volcano Etna. A valley that has always seen as a union between man and vine. The grape variety is cabernet sauvignon, an international grape that has been cultivated in this area for more than two decades. The volcanic soil, which is rich in minerals and skeleton gives it more complexity. 

Grape variety: Cabernet Sauvignon

Vinification: The grapes are harvested by hand in baskets and destemmed. The crushed grapes are collected in stainless steel containers, where fermentation takes place in the presence of the marc, at a temperature of 26-28° C. At the end of alcoholic fermentation, which takes about 9 days, the wine is put in 225-liter oak barrels, where malolactic fermentation takes place. Ageing: 12 months in barriques, 12 months in stainless steel, 12 months in bottle.

Tasting notes: Deep and bright ruby red color, which invites you to explore its intense aromatic profile. On the nose, it presents a complex bouquet in which hints of ripe red fruits, such as cherries and plums, intertwine, accompanied by delicate spicy notes of black pepper and a hint of vanilla, deriving from the aging in wood. On the palate, it reveals a full and enveloping structure. The tannins are soft and well integrated, giving the wine a notable elegance. The fruity notes are proposed in a harmonious balance with a light minerality, while the finish is long and persistent.

Food paring: It can be paired with red meats, but is also to be tried with blue fish and tuna and also with "cous cous" made with meat and vegetables.

Alcohol content: 14% vol.
