Abissi, with its adventurous spirit, stands out as the first sparkling wine in the world to embrace the mystery of the ocean depths for its aging process. Since 2009, when the first bottles of Abissi sparkling wine—vintage 2008—were submerged with both apprehension and excitement, we have proudly continued to follow the path set forth by that moment. This sparkling wine, crafted from the dedicated cultivation, is bottled with care in specially tested bottles designed to withstand pressures of up to 24 atmospheres. The bottles are fitted with corrosion-resistant crown caps and housed in sturdy stainless steel cages built to endure harsh conditions. These are submerged at a depth of 60 meters off the coast of Sestri Levante, where a constant temperature of 15°C allows for at least 18 months of aging. The continuous movement of ocean currents imparts unique aromas and structure to the sparkling wine, making it truly distinctive.

Grape variety: Bianchetta Genovese, Vermentino, Çimixà

Vinification: Early harvest and preparation of the sparkling wine base using the cryomaceration technique, temperature-controlled fermentation. Drawing and frothing.
Immersion on the seabed of the bottles in stainless steel cages at a depth of 60 metres at a constant temperature of 15°, with a minimum stay of eighteen months. Racking and disgorgement with refilling with the same product.

Tasting notes: Full straw yellow colour, fine and persistent perlage, intense aroma with a broad bouquet that varies between musky and brackish, dry, long flavour and marked minerality. Available in limited quantities.

Food pairing: Excellent as an aperitif and throughout the meal with preference given to seafood and seafood preparations.

Alcohol content: 12% vol.
