White wine made from a blend of carricante and grecanico grown in the Etna districts. The planting density is 6000 vines per hectare. The soil is predominantly volcanic, rich in minerals and skeleton. Harvesting takes place at different times: grapes picked in boxes, bunch by bunch, are immediately destemmed and placed in the press.
Grape variety: Carricante, Grecanico
Vinification: The must is decanted for 24 hours, then it is fermented in steel tanks with temperatures of 16-17°C for about a week and then undergoes malolactic fermentation. Before the winter, the final blend is made, which ages for about six months on the noble yeasts. Refinement: 6 months in stainless steel, 3 months in the bottle.
Tasting notes: The wine has a straw yellow colour and the nose is striking in its initial aromatic complexity, with intense floral and tropical fruit scents. In the mouth it is fresh, ample and has good sapidity.
Food pairing: pairs well with aged cheeses, white meats, shellfish.
Alcohol content: 12.5% vol.
